Weeknight Grilled Salmon Brushed with Dijon and Lemon - Crushed Garlic Breadcrumb Sprinkle
An easy, healthy and delicious weeknight salmon entree that will become a staple recipe in your cooking repertoire.

I can eat this dish at least once a week. Brushed simply with a dijon mustard - lemon glaze and finished with a sprinkling of yummy garlicky bread crumbs. In this recipe I used my lodge cast iron seasoned grill pan. It holds heat beautifully, and produces clean grill marks on the fish. After cooking on the presentation side, it is simply turned over, the heat is lowered and the glaze is brushed on ~ easy! Salmon has a lot of natural oils, so an assertive, tangy glaze is welcome.
When preparing this dish in the cold winter months I like to accompany it with hearty side dishes. Fennel is plentiful and fresh in the market now, you will learn how to slice and simply roast this anise flavored vegetable. There are some tricks to successfully roasting vegetables, so read on! Potatoes pair beautifully with salmon, and let me tell you I am quite bored with the garlic mashed variety. I developed this hashed tri color potato recipe for the nice chunky texture, flavor, and what a gorgeous pop of color! Cut the potatoes into a 1/2" dice, and they will saute quickly, a side dish ready in about 20 minutes. A sprinkle of garlicky breadcrumbs adds flavor and crunch on top of the flaky salmon. Add any extra to salads, great too over sauteed winter mushrooms.
