Cool Honeydew Soup with a hint of Mint, Kale and Cucumber
What color and flavor! Mint and kale add to the intense color. The garnish is an integral part of the soup which adds a punch of texture.

I love making blender soups. It's kind of scientific; a squeeze of this, a measuring cup of that. In a few seconds, the blender is turning these ingredients into and incredibly delicious puree of soup. Full of natural ingredients and antioxidants. Honeydew melon has only 60 calories per cup, and rich in vitamin C and potassium. Honeydew melon is the star flavor. Supporting accents are cucumber, kale and lime. A little kick of heat comes from jalapeno, or roasted ancho chiles. Agave nectar offers a touch of sweetness, but allows the other flavors to shine. Cubes of ciabatta bread are softened with some garlic, water and vinegar - this adds just the right texture to the soup. Otherwise, the soup would be more like a liquid smoothie.
For this recipe, I have used my Vitamix blender. It is super powerful and produces this bright colored soup with ease. It is an investment, if using a blender with less strength, you might need to whirl the soup for a little longer.
I served this soup as a first course at my friend and client Susan's home last week. She suggested the idea of this soup, so I had fun thinking of the flavor combinations. I added kale for color and nutrition.
So refreshing and delicious declared by all! A wonderful first course, snack or light lunch.
