Blue Corn Madeleines with Cheddar Cheese, Fresh Corn and Scallions

I am crazy about these savory Madeleines! A little crunchy on the exterior, due to the fresh corn, cheddar and scallions first put in the tin. Bakes in 10 minutes with minimum preparation. Enjoy real home cooked flavor in minutes - and they are beautiful to look at!
Blue cornmeal is light blue or violet in color. It is ground from whole blue corn and has a sweet flavor. The cornmeal consists of dried corn kernels that have been ground into a fine or medium texture. I have used "Bob's Red Mill Blue Cornmeal". Look for it at health food stores and some supermarkets with a nice natural foods section. You can not beat the color of the finished Madeleines ~ a lavender - blue color. Yellow cornmeal can be interchanged.
Great to serve with many main course salads, your grilled specialties, and of course any Southwestern recipes.
